Here is a gluten free artichoke side dish which is healthy and delicious to serve as a unique addition to a meal, especially an Italian meal or as a pot luck dish for a dinner party.
Pop Pop & Weasie (Lee and Elyse) brought this to the last get together and it was a huge hit.
Baked Artichokes
2 (14 oz.) cans quartered artichokes, drained, then cut in half again.
1 or 2 tablespoons fresh lemon juice
4 tablespoons finely chopped pecans
3 or 4 tablespoons (or more if you like) grated parmesan cheese
1 teaspoon dried Italian seasoning
1 or 2 cloves of finely minced garlic
11/2 teaspoons extra-virgin olive oil
Heat oven to 375 degrees. Coat a 9 inch pie plate with cooking spray.
Pat artichokes dry with paper towels.
Place artichokes in pie plate and sprinkle with lemon juice.
In a small bowl, combine pecans, parmesan cheese, Italian seasoning, garlic, and oil and toss until thoroughly mixed. Sprinkle evenly over artichokes.
Bake for 15-18 minutes, or until golden. Serve and yum!
