It seems to be an impossibility when you try because you just end up with sticky dough covered hands instead or else you use too much flour and they end up dry.

If you slightly dampen your hands with water, the moisture will allow you to handle the mixture and roll a cookie ball of dough to be put on your baking tray.
The water will also cook into the cookie and make it smoother and prettier looking in the end.
